Quinoa with Feta and Cranberries

This is a a very summery, light and healthy dish which can be eaten as a side or a meal in itself. The cranberries provide a pleasant burst of freshness whilst the pine nuts add a nice crunch!

The recipe has been created by Giulia Mulé, a London based Food Blogger of Italian origin.


  1. Quinoa - 100g
  2. 1 Red Onion, chopped
  3. Olive Branch Olive Oil
  4. Olive Branch Red Wine Vinegar 1 tbspn
  5. Balsamic Vinegar 1 tbspn
  6. Brown Sugar 1 tsp
  7. Cranberries - handful
  8. Pine Nuts - handful
  9. Feta Cheese - 100g
  10. Rocket Leaves
  11. Salt and Pepper

Cooking Instructions:

  1. Caramelise one red onion with olive oil, red wine vinegar, balsamic vinegar and brown sugar
  2. Toast some pine nuts
  3. Rinse and cook 100g quinoa (this recipe uses multi-coloured one)
  4. Let them cool down, then mix with 100g feta cheese, a few cranberries and rocket salad leaves
  5. Season with salt and pepper
